Head south along the coast to Galle, a fortified city the Dutch and Portuguese built and left behind — narrow lanes, coral-stone walls and a lighthouse still standing watch over the Indian Ocean. Walk the ramparts at your own pace, browse the boutiques and cafés tucked inside the fort, and take in the view from the bastions where the sea meets the old town.

From there the day opens up along the coast: a stop to watch the South's iconic stilt fishermen at work, a visit to a turtle hatchery where rescued hatchlings are raised before release, and a short boat ride through the mangroves and islets of Koggala or Madu, depending on the tide and your interest.
